Honey is generally available throughout the year with Soft Set honey being a specialty and Sourwood available some years as well! You can make arrangements to buy directly from the apiary or shop one of our local vendors. Availability varies. We stock Community on Jackson St. downtown as well as the gift shops at The State Botanical Garden of Georgia and Sandy Creek Nature Center.
Each year we take a number of hives from out main yard in Athens up to the mountains of northern Georgia to collect the delicious nectar from the Sourwood tree. It’s hard work but worth it! The distinct flavor of Sourwood honey is known among honey connoisseurs as one of the best in the world!
What is Soft Set honey? It goes by many different names: creamed, whipped and spun are commonly used but none is quite as accurate. There’s no cream in it and it isn’t spun or whipped. Soft Set is more appropriate. It is a temperature controlled process of introducing and inducing super-tiny crystals in the honey to produce a creamy texture like peanut butter. Done right it’s never gritty and actually prevents the honey from forming those large crystals.
Honey is available for pickup at Tallassee Highlands. We’re ten minutes from downtown, out Tallassee Road near BHL Middle School. Please reach out using the contact form to place an order. We’ll make arrangements with you to have your honey ready for pickup at our door. Larger orders may be eligible for delivery in the Athens area. The Gift Shop at Sandy Creek Nature Center and Community on North Jackson St also offer a selection of our products.
